I love this side dish with just about everything. The potatoes get crispy and the carrots and onions become caramelized.

Garlic Shrimp Kebabs
Amazingly, our market almost never has fresh shrimp which is really irritating since we live on the Atlantic coast. This week was no exception but luckily Matte and I have found a frozen alternative that we have had excellent results with. In the frozen fish section, we have taken to picking up the Zipperback Black Tiger Shrimp (a PC product). These frozen shrimp retain their flavour so there is no bland mildly fishy taste you would normally get with frozen shrimp. I have been craving shrimp kebabs for weeks so here goes…
Salsa Baked Haddock
Since I only posted one recipe last week, this is a make up post 🙂
This haddock recipe is super simple and delicious. It is exactly what you would expect in a light summer meal and our 7 year old daughter was finished eating before us so that’s saying something.
Tomato & Cucumber Salsa
In my search for some delicious low-fat snacks I decided to try making my own salsa. I have been pairing this with baked pita chips (you can find pre-made ones at Pete’s Fruitique), but you can also pair this with fish, bbq hamburgers etc.
Chicken Stuffed with Cheese & Broccoli
We are always trying different stuffed chicken breast recipes but this is one of our favourites. Of course we love cheese so this is no surprise. This recipe is still in experimental stages so I will give some tips for improving the technique I used in this recipe.
Lasagna & Garlic Bread
Since just about everyone I know is feeling more health conscious lately, I decided to try making a healthier lasagna. To make this recipe low-fat reduce the amount of cheese used and omit the lean ground beef or replace with ground chicken.
Back in the Game!
I realize it has been quite some time since our last post but I want to re-try the cooking blog. I have many and sundry excuses for dropping the blog; ranging from the “Winter Blues”, fatigue to sheer laziness and procrastination. And also not wanting to admit that I stopped making bread. While I loved having homemade bread, the time factor really played on me. And I have chosen instead to focus on spending time with my family, enjoying my weekends out and about, learning to play my bass and soon rowing. There really isn’t much time for anything else. That being said we are still cooking meals that we’d like to share with our friends and family, so the blog made it on the list as well.
To celebrate my return to blogging, I have a new recipe to share that the collective group has dubbed “Meat Bread”.

Prosciutto Bread – hors d’oeuvre
For Matte’s birthday I decided to make a Portuguese meat bread called Bola. It was delicious and disappeared amazingly fast at the party. This is a definite crowd pleaser. However, I must forewarn you that the dough is not exactly the easiest to work with so this will require a moderate degree of patience.
