Salsa Baked Haddock

Since I only posted one recipe last week, this is a make up post 🙂

This haddock recipe is super simple and delicious.  It is exactly what you would expect in a light summer meal and our 7 year old daughter was finished eating before us so that’s saying something.

Recipe:

3-4 Haddock fillets

1 half yellow pepper

2 tomatoes (cored)

1/4 red onion

3/4 tsp basil + 1/2 tsp

1/2 tsp parsley

1 lime (juice only)

1 tbsp white cooking wine

1 tbsp olive oil

sea salt and fresh ground pepper

In a 9 x 13 baking dish, brush bottom with olive oil and place haddock fillets in dish.  Season the fillets with salt, pepper and basil.

Core and seed the tomatoes and chop into cubes.  Chop the yellow pepper and onion to the same size cubes as the tomatoes.  In a bowl, combine olive oil, white cooking wine, tomatoes, onion, yellow pepper.  Squeeze the juice from 1 lime over top and add basil, salt and pepper.  Mix well.  You can make this ahead of time to allow the flavours to set.

Pour the salsa mixture over top of the haddock fillets.

Bake in the oven at 400F for 20-25 minutes.  This can also be cooked on the bbq, just wrap each fillet separately in aluminum foil with the salsa mixture spooned over top.

We served this with steamed green beans and vegetable rice.
